Chueotang (Korean Loach Soup) is a traditional Korean nourishing soup made by simmering loach fish until tender, then grinding or mashing it and cooking it with soybean paste, dried radish greens, napa cabbage leaves, and various vegetables.
Known for its rich, savory broth and deep umami flavor, Chueotang is a nutritious dish containing protein and calcium. It has long been enjoyed in Korea as a traditional comfort food believed to help restore energy and vitality.
For an even richer and nuttier flavor, Chueotang can be enjoyed with perilla seed powder, garlic chives, and Korean pepper powder (sancho).
