If the only Korean seaweed you have tried is the thin, paper-flat snack sold in most grocery stores, gopchang gim (곱창김) will surprise you. It is thicker, crunchier and deeper in flavor, which is why many Korean families keep it for the dinner table rather than the snack drawer.
What does "gopchang gim" mean?
Gim (김) is the Korean word for laver, the seaweed that is pressed into thin sheets and roasted. Gopchang describes its look: the raw seaweed strands are long, wrinkled and curly, a shape that reminded people of gopchang (Korean-style intestines). The name is only about the shape. Gopchang gim is seaweed, nothing more.
How is it different from regular roasted seaweed?
- Thicker sheets. Gopchang gim is naturally thicker, with a loosely woven, slightly porous texture and small natural holes.
- More crunch. That thickness gives a crisp, crunchy bite instead of melting away at once.
- Richer flavor. Expect a nutty taste with a subtle natural sweetness.
- A short harvest season. Seorae Gopchang Gim is made from first-harvest gopchang seaweed, gathered for only about 20 days each year. Haenong's pole-raised Gopchang Dol Gim is harvested only from November through January.

Two kinds of gopchang gim at Premium K
1. Seorae Gopchang Gim: seasoned and bite-sized
Roasted with soybean oil, sesame oil and a pinch of salt, then cut into bite-sized pieces and packed in small 2.2 g bags (20 bags per pack). You get the full crunch of gopchang gim in a size that is easy to eat anywhere. The maker also removed the plastic tray and silica gel packet from the packaging, which it says cuts packaging waste by about 50%.
Ingredients: seaweed (Korea), soybean oil, sesame oil, salt, herb extract. Contains soybeans and sesame.
2. Haenong Pole-Raised Gopchang Dol Gim: full sheets
Grown with the traditional pole-raised method (jijusik, 지주식), where the seaweed is exposed to the natural rise and fall of the tide. It is grown without acid treatment. Each pack has 10 full sheets (22 g), a good size for wrapping rice.

How to eat gopchang gim
- With hot rice: lay a piece over a spoonful of rice and eat it in one bite. This is the classic Korean way.
- Straight from the bag: the seasoned bite-sized pieces make an easy savory snack.
- With kimchi or side dishes: wrap rice with a little kimchi or jeotgal for a quick meal.
- Crumbled on top: sprinkle it over rice bowls, noodles or fried rice for extra crunch.
Storage tip: seaweed picks up moisture quickly. Seal the bag tightly after opening and keep it away from humidity and direct sunlight.
